Magic Sarap Pancit Molo (Pork wonton with shredded chicken broth)

Pancit Molo is a Filipino wonton soup  of a mixture of ground pork wonton, shredded chicken meat, and shrimps. It is inspired Fujian Chinese cooking.

Servings 12-15

Ingredients

Filling

1/4 kg lean ground pork
1/4 kg large shrimp, shelled and finely chopped
1/4 cup minced onions
1/4 cup grated carrot
1/4 cup grated and squeezed singkamas
4 cloves minced garlic
1 sachet Magic Sarap (a packet of umami msg granule sold in the Philippines)
25 pcs molo wrapper
1 egg, slightly beaten for sealing

Broth

1 pc whole chicken breast with bone
3 liters water
2 tbsp vegetable oil
1 head minced garlic
1 pc minced onion (medium size)
6 slices ham (cut into strips)
2 stalks celery, peeled and minced
6 saches MAgic Sarap (8 g)
1/4 cup chopped spring onions
2 heads of minced toasted garlic

Procedure

The wrap


  1. Combine all the ingredients of the filling in a bowl.
  2. Season with Magic Sarap.
  3. Wrap 1 tbsp of mixture into molo (wonton) wrap; seal edges with beaten egg.
The broth
  1. Place the chicken breast in a pot of water.
  2. Simmer for 30 minutes.
  3. Get the chicken and shred it.
  4. For the broth, saute garlic and onion for two minutes.
  5. Add ham, celery, shredded chicken.
  6. Pour chicken stock, simmer and season with Magic Sarap.
  7. Drop in the molo wrap and simmer for 5 minutes .
  8. Transfer into a serving bowl and garnish with spring onions and toasted garlic.
